I would like for RE to add a checkbox to un-apply a gift to a pledge.

Everyone would benefit from this.  Sometimes a gift is inadvertently applied to a pledge because the donor has multiple pledges or makes a gift that is separate from the pledge, but the gift is mistakenly applied toward the pledge.

    Giving a donor options to tailor a gift designation enhances the relationship - I endorse the idea with the caveat that the implementation should not become onerous to the donor.
