Please make it possible to move a gift record from an individual to an organization....and vice versa. How is this not possible?

It's nonsense that I have to create a dummy constituent record, move the gift to the dummy, convert the dummy from O to I, then change the constituent on the gift. This shows that it is indeed possible to move these records - why make the users of your product go through so much work?
