how to mark constituent records to receive e-receipts. If a constituent wants this for all receipts, there's no way to have it happen.

We use receipt stacks to designate printed or e-receipts. This is good for one time, but if a constituent always wants e-receipts, this should be connected to the constituent record, not just the gift record. Right now there's no work-around--nothing to make this work at all.
