This is easily achieved. Simply go into the User's record in Admin/Security, and remove them from all groups. They are now an inactive user. I also put a "Z" in front of their user name once they're not part of the team, as this helps keep the user list more tidy. All former employees/users appear at the bottom of the User's name list and active users are on top.
I utilize the same system of zz user as well and I also have a security user group named inactive that we add the user to. Both are very helpful!
