We would like to review a change log of all fields updated across the past week (or a set time period). Specifically we would find it beneficial to review this change log for all constituent contact details, constituent status, and constituent codes.

When records are merged with consent information on the record the solicit code is not updated to reflect the most recent consent and needs to be updated manually.

with arrival of GDPR and the new fundraising regulations, it would be handy to have the consent field as must be completed field, even if no consent has been received at least you can still log this as no consent received.
