Fields that have hidden criteria in Exports are not immediately obvious. If you are reusing an export  from another user or from a  previous year, you may be unaware that restrictions exist. By italicizing or otherwise highlighting fields with criteria associated with them we can make sure we are getting the data we expect to get. If I see a field italicized I would know to check it to see what criteria are in effect.
