When merging 2 constit records there is no way to track the merge. i.e. A merge gets done which moves all Gifts etc over. 2 month later we want to know which gifts have been moved. Another example would be when 2 constituents have been merged in error and now we want to 'Unmerge' them. Right now there are no fields which keep track of this.
Amen - Convio has this unmerge capability and eTapestry at least automatically adds a note recording the merge for you. All Blackbaud Products - when will they share the technology???
Yes, at the very least it should automatically add/tag the record as having been merged (by who and when.)

if the records are merged and the link with other record removed the tie with the original gift aid deceleration is lost. Any gift aid declaration filed under the old number will have lost their audit trail. Thus making us vulnerable and in danger of failing a gift aid audit.
before the duplicate constituent utility was available, our office purchased the de-dupe plugin for a year. that tool tracked merges in the attributes tab. should be a way to incorporate this into the new utility!
