Is there a centralized way section in RE to go and update the letters, without having to create a batch and using the merge wizard?

Are you talking about Donor Acknowledgement letters? You can go to Mail | Donor Acknowledgement Letters and set them up there. No batch required, though you do need gifts in the system meeting the criteria you set up. Which is annoying. I always created a dummy gift on my record and changed the letter code as needed to create each letter.
